HPMC Hydroxy Propyl Methyl Cellulose is a kind of propanediol ethers of Methyl Cellulose. It is also a kind of non-ionic cellulose ether. HPMC Hydroxy Propyl Methyl Cellulose is white to off-white fibrous powder or granule. It can dissolve in water and some organic solvents, but not soluble in ethanol. The equeous solution of HPMC has surface activity and a layer of film is formed after drying. The ratio of Methoxyl and Hydroxypropyl is different with different specifications.

The production process of HPMC is like this, purified cotton → add caustic soda → solvent treatment → etherification → water scrubbing → centrifugalization → dry. In food industry, HPMC can be used as thickening agent, stabilizer, emulgator and gelatinizing agent.
HPMC Hydroxy Propyl Methyl Cellulose is often used as water retaining agent. It can prevent all kinds of stuffings from shrink and dry after heating. For some fry, it can not only lower the oil content and oil consumption, but also make the fry tender and delicious. HPMC has the effect of increasing surface activity and stable bubbles, which can form excellent organization structure in the bread with rice flour and soybean flour. Besides, HPMC has several outstanding performances and can be used in food paste products, milk blender drink, salad and fast food etc.. In cold drink, it can be used alone or complex use with other emulgators and stabilizers. The consumption in cold drinks is about 1%.
