HPMC Hydroxy Propyl Methyl Cellulose is a kind of propanediol ethers of Methyl Cellulose. It is also a kind of non-ionic cellulose ether. HPMC Hydroxy Propyl Methyl Cellulose is white to off-white fibrous powder or granule. It can dissolve in water and some organic solvents, but not soluble in ethanol. The equeous solution of HPMC has surface activity and a layer of film is formed after drying. The ratio of Methoxyl and Hydroxypropyl is different with different specifications.

Main Features:

  • The solution of HPMC can form reversible thermal gel after heating. Formation temperature of gel depends on the relative content of Methoxyl and Hydroxypropyl. The higher the substitution degree, the lower the gelation temperature.
  • HPMC Hydroxy Propyl Methyl Cellulose can lower the surface tension of water to 50~60/10-5N/cm2, but surface tension increases when it was heating, which has an opposite character compared with other surfactant.
  • The molecular of HPMC centers in the interfaces (gas-liquid interface or liquid-solid interface). The concentration in the interfaces is much higher than that internal solution.

Production Process:

The production process of HPMC is like this, purified cotton → add caustic soda → solvent treatment → etherification → water scrubbing → centrifugalization → dry. In food industry, HPMC can be used as thickening agent, stabilizer, emulgator and gelatinizing agent.

HPMC has the effect of increasing surface activity and stable bubbles, which can form excellent organization structure in the bread with rice flour and soybean flour. Besides, HPMC has several outstanding performances and can be used in food paste products, milk blender drink, salad and fast food etc.. In cold drink, it can be used alone or complex use with other emulgators and stabilizers. The consumption in cold drinks is about 1%.
